An Assistant Dim Sum Chef supports the Dim Sum Head Chef in preparing, assembling, and presenting a variety of steamed, fried and baked dim sum dishes. This role is hands-on and requires a deep respect for traditional techniques, attention to detail and the ability to thrive in a fast-paced kitchen environment.
Key Task:
1. Assist in crafting dumplings, buns, rolls and other dim sum items according to recipes and presentation standards.
2. Prepare fillings, doughs and sauces; ensure freshness and proper storage.
3. Operate steamers, fryers and ovens with precision.
4. Ensure consistency in taste, texture and appearance.
5. Help manage mise en place and maintain cleanliness of workstations.
6. Work closely with head chefs and kitchen staff to ensure smooth service.
7. Assist in checking stock levels and reporting shortages.
8. Follow hygiene and safety protocols, especially in handling raw ingredients.
2-3 years in Assistant Dim Sum Chef or Dim Sum CDP roles.
Working experience:
1. Experience in high-volume or dim sum operations.
2. Familiarity with traditional Chinese service etiquette.
Skills required:
1. Skilled in shaping, folding and steaming various dim sum items.
2. Precision in cutting vegetables, meats and seafood
3. Ability to work efficiently during peak service hours.
4. Strong communication and coordination with kitchen staff.
5. Consistency in portioning, garnishing and plating.
6. Willingness to learn new recipes and techniques.
7. High standards of hygiene and food safety.
