The Demi Chef De Partie is concerned with the maintenance of superior quality and standards of food preparation and presentation; the development Commis Chefs, contributing to the profitability of the kitchen brigade and responsible for the organization and effective supervision of their designated section.
What will I be doing?
As the Demi Chef de Partie, you will be responsible for performing the following tasks to the highest standards:
1. Able to manage Commis to run a shift and to ensure all mis en place is in place without supervision
2. Able to prepare, organize and cook an order in accordance with standards without supervision in any department
3. Able to show responsibility in ensuring food quality and food hygiene is up to DoubleTree by Hilton Melaka standard
4. Able to engage and create special dietary menu for guest without supervision
5. To assess and monitor cleanliness on a daily basis, ensuring that all equipment remains clean and in good working order.
6. To supervise, guide and develop chefs of lower positions ensuring the quality of food production remains at optimum level.
7. To liaise closely with the Section Chef, ensuring food quality and preparation techniques are of the highest standard.
8. To closely monitor and control the daily food merchandise, ensuring quality of goods received, taking corrective action where necessary.
9. Food Safety and Hygiene: To follow all Food Safety System polices and guide lines.
10. To follow and support the job direction given by section chef
11. To follow Double Tree by Hilton Melaka Fire & Safety procedures.
12. Ensuring all Hotel policies and procedures are correctly observed and followed.
13. Performing any additional tasks as delegated by management or guests to ensure our guests receive outstanding service.
