Job Description


1. Support the Chef de Partie or Sous Chef in the daily operation and work. 2. Work according to the menu specifications by the Chef de Partie. 3. Keep work area at all times in hygienic conditions according to the rules set by the company. 4. Control food stock and food cost. 5. Prepare the daily mis-en-place and food production in different sections of the kitchen. 6. Follow the instructions and recommendations from the immediate superiors to complete the daily tasks. 7. Ensure the highest standards and consistent quality in the daily preparation and keep up to date with the new products, recipes and preparation techniques. 8. Instruct and lead subordinates through their daily requirements in food preparation and actively take part in set up of events. 9. Coordinate and participate with other sections of requirements, cleanliness, wastage and cost control. 10. Have excellent knowledge of menu creation, maintaining quality and controlling costs in a volume food business. 11. Personally responsible for hygiene, safety and correct use of equipment and utensils. 12. Checks periodically expiry dates and proper storage of food items in the section. 13. Consults daily with Chef de Partie or Sous Chef on the daily requirements, functions and also about any last minute events. 14. Guides and trains the subordinates on a daily basis to ensure high motivation and economical working environment. 15. Should be able to set an example to others for personal hygiene and cleanliness on duty. 16. Daily feedback collection and reporting of issues as they arise. 17. Assess quality control and adhere to operational service standards. 18. Carry out any other duties as required by management. Adheres strictly to safety and sanitation regulations. Responsible for proper preparation for all dishes with regards to basic preparations, taste, temperature, garnishing and timing in accordance to the job requirements. Ensures proper coverage and staffing in his team. Maintains proper business relations with superiors, subordinates and others service departments. Maintains proper personal appearance, hygiene and sanitation. Performs duties common to all Sr Chef de Parties and other duties as may be assigned. Teach subordinates and follows on the standards and policies Replaces Direct Supervisor during his absence.
