As our Director of Wine, you will lead the development of an exceptional wine program across our high-end dining venues, shaping memorable journeys for our diverse and discerning guests. What will I be doing?



As the Director of Wine, you will be responsible for performing the following tasks to the highest standards:


Wine Program Leadership

Oversees and leads the wine program across all restaurants, bars, lounges, and banqueting operations, ensuring consistency, exceptional quality, and alignment with the hotel's luxury brand standards.

Strategic Procurement & Supplier Management

Negotiates with wine suppliers and distributors to secure premium selections while optimizing cost efficiency, inventory control, and purchasing strategies.

Guest Experience & Event Innovation

Conceptualizes and delivers exclusive wine events, tastings, and VIP experiences that elevate guest engagement and reinforce the hotel's reputation for luxury and personalization.

Team Development & Training

Trains, mentors, and inspires sommeliers and F&B team members to deliver exceptional wine service, while designing and implementing ongoing training programs that foster a culture of wine excellence

Financial & Operational Acumen

Monitors wine sales performance, prepares budgets and forecasts, and implements strategies to drive profitability and operational efficiency across all wine-related functions.


Brand Alignment & Innovation


Ensures wine offerings reflect the hotel's brand identity and guest expectations, while staying ahead of global wine trends, sustainability practices, and emerging producers.

Compliance & Quality Assurance

Maintains high standards in wine storage, handling, and service protocols, ensuring full compliance with local and international alcohol regulations and licensing requirements.

What are we looking for?



A Director of Wine serving Hilton Brands is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:


Minimum of 8-10 years of progressive experience in wine service or sommelier roles, with a proven track record of increasing responsibility and leadership. Experience gained within luxury hospitality environments, including 5-star hotels, fine dining restaurants, or Michelin-starred establishments, is strongly preferred. Pre-opening experience is considered a valuable asset, as it reflects strong adaptability and strategic planning capabilities. Certified Sommelier (Court of Master Sommeliers), WSET Level 3 Award in Wines or WSET Diploma (Level 4), or equivalent internationally recognized wine certification. Demonstrated expertise in wine curation, pairing, and cellar management, with a strong understanding of global wine regions and vintages.

Proven leadership capabilities with experience in training and mentoring food & beverage teams.

Exceptional communication and interpersonal skills, with a passion for delivering elevated guest experiences. Proficiency in inventory management systems, cost control, and supplier negotiations. Multilingual proficiency is preferred to enhance guest engagement across diverse clientele.
