Mandarin-speaking Executive Chefs and Sous Chefs

with strong Chinese & Western cuisine management experience to join our

European River Cruise team

.



Responsibilities:



Oversee overall kitchen operations according to

Viking China Outbound Standards

and

HACCP

. Ensure high-quality meals (Chinese and Western cuisine) for passengers and crew. Develop and manage menu cycles, ingredient procurement, and cost control reports Lead food safety implementation, staff training, and kitchen performance improvement. Coordinate with ship management and ensure smooth operation during embarkation and disembarkation.

Executive Chef:



Lead menu development and recipe optimization for Chinese and Western dishes. Adjust menus to meet Chinese guests' preferences while maintaining brand standards. Approve procurement budgets, monitor kitchen costs, and report operations to the shipowner. Handle kitchen emergencies (e.g., ingredient shortages, equipment issues) and prepare contingency plans.

Sous Chef:



Assist the Executive Chef in daily kitchen operations and staff supervision. Ensure cooking consistency and food quality for all Chinese and Western meals. Take charge of kitchen operations when the Executive Chef is absent. Oversee inventory and quality checks, record issues, and propose improvements.

Requirements



Must speak

Mandarin fluently

(daily team management and passenger interaction). At least

2 years of kitchen management experience

(hotel, restaurant, or cruise). Strong knowledge of

Chinese & Western cuisine preparation

and

cost control

. Experience in

international catering or cruise ship management

preferred.

Culinary education or formal training

is an advantage. Strong leadership, planning, and communication skills; professional and reliable.

Appearance:

No visible tattoos while in uniform
