Located at the heart of the Kuala Lumpur city center, Traders Hotel by Shangri-La is looking for a dynamic, and multi-skilled talent in delivering our Asian hospitality.

As Executive Sous Chef (Western) we rely on you:

  • Provide assistance to Executive Chef in all ramifications.
  • Oversee kitchen operations, which must be done in accordance with the organization\'s standards Operating Procedures.
  • Closely monitor process of food preparation.
  • Regularly reviews existing menus and cycles with Executive Chef / Director of Food and Beverage.
  • Proposes new items, and coordinates menu development.
  • Directs and oversees the planning of training activities for the department.
  • Attends department meetings and summarizes section performance.
  • Highlights achievements, problems, challenges.
  • Attends and participates in Productivity Reviews.
  • Coordinates with outlet managers for daily events.
  • Conducts/attends departmental briefings.
  • Provides feedback to management.
  • Oversees maintenance and handling of equipment used.
  • Ensures timely reporting of malfunction or maintenance deficiencies to appropriate area.
  • Adheres to and enforces Standard Hygiene and Sanitation Measures and practices, at all times, whilst handling, preparing, serving and storing all foodstuffs and other related products or equipment.
Requirements:
  • Degree/Diploma in Culinary/Hotel Management/Hotel school/ culinary graduate.
  • Good command in speaking English. Able to speak other languages will be an added advantage.
  • With a minimum of three (8) years\' working experience in a similar capacity.
  • Good knowledge and understanding of Food Safety Management System and Hazard Analysis and Critical Control Point (HACCP).
  • Cooperative, adaptable, flexibility in working hours, good interpersonal skills.
  • Due to work permit restrictions, only citizens of Malaysia and Permanent Residents of Malaysia shall be considered.
