Job Description


JOB SUMMARY Responsible for all practical supervision of F&B kitchen outlet and all participation in all activities of planning, directing, controlling food and all market ordering and costing, conducts training and supervises departmental training. Supports improvement of revenue while costs are held to a minimum. Maintains the high quality of food and services standard in all F&B kitchen departments at all times. DUTIES AND RESPONSIBILITIES

  • To ensure that all outlet kitchen adhere to company policies & procedures, and minimum standards.
  • To monitor food standards and to work with the chef to take corrective action where appropriate.
  • Encourage chefs and cooks to be innovative and creative and to ensure product consistency in quality of appearance and taste.
  • To assist in the development of product specifications for all menus
  • To ensure accurate maintenance of food recipes data and the kitchen is managed in accordance to acceptable food cost.
  • To assist purchasing officer/executive in cost effective production of raw materials and work with purchasing department in the event of price fluctuation of fresh products.
  • To co-ordinate the stewarding requirements of the kitchens.
  • To assist in all food & beverage promotional activities and preparation of annual budget exercise.
  • Identify training needs and plan training programmes for the employees. Conduct training for staff in accordance to the annual training plan, in order that employees have the necessary skills to perform their duties.
  • Supervise the employees within the department, ensuring that the correct standards and methods of cooking are maintained as stated in the departmental operational manual.
  • Hands on support and supervison of kitchen operation during busy period.
  • Conduct daily kitchen briefing and monthly kitchen meeting.
