Requirements

  • 2-5 years experience in a commercial kitchen; Halal-certified environment preferred.
  • Able to lead and supervise small kitchen teams during operations. (4-6 Team)
  • Skilled in food cost control, portioning accuracy, and waste reduction.
  • Strong awareness of Halal operational standards and documentation.
  • Able to solve problems and maintain workflow in high-pressure situations.
  • Good communication and coordination with Front-of-House and HQ.
  • Free from any substance use including cigarettes, vape, and drugs.
Responsibilities
Kitchen Operations & Quality
  • Lead daily kitchen workflow including prep, cooking execution, and station coordination.
  • Ensure consistent taste, texture, portioning, and plating across all shifts.
  • Maintain hygiene, sanitation standards, Halal compliance, and safe equipment usage
P&L, Cost & Inventory Control
  • Manage and monitor P&L performance at kitchen level through food cost and manpower planning.
  • Control COGS by ensuring portion accuracy, yield efficiency, and minimizing waste.
  • Plan manpower schedules according to sales volume for balanced productivity and labor cost.
  • Conduct regular stock checks, maintain par levels, and ensure accurate stock movement records.
  • Coordinate stock replenishment needs with HQ Team.
Team Leadership & Training
  • Train and guide kitchen staff to maintain speed, consistency, and product standards.
  • Assign tasks, monitor performance, and uphold kitchen discipline and teamwork culture.
Menu R&D & Product Development
  • Improve and refine menu items by focusing on bestsellers and customer preferences.
  • Develop new product combinations or enhancements that are practical, sellable, and aligned with cafe identity.
  • Conduct product testing, tasting, costing, and complete accurate recipe & SOP documentation.
  • Coordinate menu launch readiness with FOH and HQ Operations.
Reporting & System Compliance
  • Submit kitchen performance reports, stock logs, wastage records, and cost reports to HQ.
  • Ensure communication, execution, and documentation follow company SOP and system framework.
  • Handle customer feedback, operation issue professionally and implement corrective improvement when required.
