About the Role
As a Back of House (BOH) Trainer at KyoChon Sdn Bhd, you will play a crucial role in shaping the skills and performance of our kitchen teams across Malaysia. You will be responsible for developing, coaching, and certifying BOH staff to ensure they consistently deliver KyoChon's signature quality, food safety, and operational excellence.
This role requires a hands-on trainer with strong kitchen expertise, the ability to enforce SOPs, and the passion to build high-performing BOH teams that uphold KyoChon's global standards.
What You'll Be Doing
Conduct structured BOH training for new hires, existing staff, and managers on:
Food preparation
Chicken marination & frying SOP
Portioning & plating
Equipment usage
Inventory management
Provide on-ground coaching during store operations, including opening shifts and peak periods.
Develop training modules, checklists, and learning materials aligned with KyoChon SOPs.
Assess and certify trainees through practical skill evaluations.
Monitor food quality, cooking consistency, yield, and prep standards during store visits.
Ensure strict compliance with KyoChon BOH SOP, food hygiene standards, Halal, HACCP & ISO 22000.
Conduct routine BOH audits: food safety, temperature logs, FIFO, calibration, cleanliness & hygiene.
Support outlets during new store openings, high-volume operations, and staffing gaps.
Troubleshoot BOH issues such as fryer malfunctions, quality deviations, or prep inaccuracies.
Submit training reports, audit findings, evaluation results, and maintain training databases.
Highlight gaps in SOP execution and recommend corrective & preventive actions to Management.
What We're Looking For
Minimum 5 years of BOH/kitchen experience in QSR, casual dining, or commercial kitchens.
Strong technical knowledge in frying operations, food safety, hygiene, portioning & recipe standards.
Experience in training, team-leading, or supervising kitchen teams is an added advantage.
Excellent communication skills (Bahasa Malaysia & English).
Able to work weekends, public holidays, and travel nationwide for training.
Physically fit and able to work in a hot kitchen environment.
High attention to detail, strong discipline, and the ability to enforce SOP fairly and firmly.
