Job Description

The

Operation Manager

is responsible in overall day-to-day hospital catering operations and compliance with health and safety standards.

LOCATION:



Hospital Serdang, Kajang.

RESPOSIBILITIES:



Ensure all meals are prepared at the

highest standard

and

delivered on time

. Implement best practices for catering operations, including

menu planning, inventory management

, and

cost control.

Lead and manage the hospital catering team, including dietitians, catering officers, chefs, kitchen staff, servers and support staffs by ensuring operations run smoothly at all sections, including vegetable preparation, butchery, cooking, and plating sections. Develop and manage the hospital catering department budget, monitor expenses, analyse variances, and implement cost-saving measures. Maintain strict adherence to hygiene and safety standards in food preparation and service quality in compliance to Halal, GMPs, HACCP and KKM's health and safety regulations. Monitor portion control, presentation, and taste to ensure consistent quality of meals. Maintain accurate records of food safety inspections and other regulatory requirements. Any other duties assigned and instructed by the superior.

QUALIFICATIONS:



Bachelor's degree in Food Service Management, Food Tech, Dietetic or related field with minimum 5 years of experience. Relevant certifications are a plus. Proven experience in managing catering/kitchen operations, preferably in hospital/healthcare setting. Typhoid and Food Handling Certificate is a must. Strong leadership skills and ability to manage a diverse team. Excellent communication and interpersonal skills. Knowledge of nutrition and dietary requirements for various health conditions. Solid experience and knowledge in Hospital business, processes and procedures. Proficiency in budgeting, cost control, and financial analysis. Attention to detail and commitment to maintaining high food quality standards. Ability to adapt to changing demands and prioritize tasks effectively. Familiarity with KKM's food safety regulations and compliance. Required to work on shifts, weekends and public holidays. Possess own transport and willing to travel if required.
