The Outlet Chef oversees the overall kitchen operation to ensure smooth daily workflow, consistent food quality, and compliance with hygiene and halal standards. This role leads the kitchen team in menu execution, food preparation, cost control, and service excellence, maintaining the brand's identity of a modern nasi lemak restaurant.
Supervise and manage all kitchen operations, ensuring consistent food quality, taste, and presentation.
Plan daily mise en place and manage kitchen workflow for efficient service.
Ensure all dishes are prepared according to standard recipes and portion sizes.
Monitor food inventory, minimize wastage, and ensure proper storage and labeling.
Work closely with the Operations Manager and Halal Executive on compliance and food safety matters.
Train, coach, and motivate kitchen staff to achieve operational excellence.
Ensure cleanliness and hygiene standards are strictly followed according to SOP and HACCP.
Monitor kitchen equipment condition and coordinate maintenance as needed.
Manage food costing, portion control, and stock ordering within the approved budget.
Participate in menu development, seasonal specials, and continuous improvement initiatives.
Job Requirements
Minimum 3-5 years of experience as a Chef or Sous Chef, preferably in Malay or modern casual dining.
Strong knowledge of traditional and modern Malay cuisine, especially nasi lemak-based dishes.
Understanding of food cost control, inventory management, and kitchen workflow.
Certification in Food Handling and Typhoid required.
Able to work on shift, weekends, and public holidays.
Ability to lead and motivate a team in a fast-paced environment.
Strong sense of discipline, cleanliness, and teamwork.
