The Senior Catering Manager is a proactive, hands-on sales leader responsible for soliciting, negotiating, and contracting high-value corporate, social, and MICE (Meetings, Incentives, Conferences, and Exhibitions) events. This role focuses on maximizing revenue from the resort's meeting and banquet space, mentoring junior sales staff, and ensuring the smooth transition of event details to the Banquet Operations team for successful execution.
Key Responsibilities
1. Revenue Generation and Sales Leadership
Proactive Selling:
Aggressively pursue new catering business and manage a dedicated portfolio of key accounts and high-potential clients to achieve and exceed personal and resort sales revenue goals.
Contract Negotiation:
Lead the sales process from initial inquiry to contract signing, skillfully negotiating terms, pricing, and services to maximize event profitability.
Creative Packaging:
Design, develop, and sell creative catered events, utilizing up-selling techniques for food, beverage, and resort services to increase the total average check per event.
Market Intelligence:
Stay abreast of local market trends, competitor offerings, and economic conditions to develop targeted sales strategies.
2. Client Relationship and Planning
Client Consultation:
Conduct in-depth consultations, site inspections, and menu tastings with clients, wedding planners, and meeting organizers.
Detailed Documentation:
Ensure all necessary information (menus, room setup, timelines, vendor details) is accurately documented in Banquet Event Orders (BEOs) and function sheets, and circulated to all relevant departments within the resort in a timely manner.
Liaison:
Act as the primary contact and liaison between the client and the resort's operational departments (Culinary, Banquet Operations, Audio-Visual, Front Office).
Post-Event Follow-up:
Conduct post-event evaluations and follow-up with clients to ensure satisfaction and secure repeat business.
3. Operational Support and Administration
Mentorship:
Provide coaching, guidance, and support to Catering Sales Executives or Assistant Catering Managers, enhancing their sales skills and account management capabilities.
Forecasting:
Assist the Assistant Director of Catering or Director of Sales in preparing accurate weekly and monthly banquet function forecasts and updating confirmed sales data.
Compliance:
Ensure all contracted events adhere to the resort's service standards, financial controls, and local health and safety regulations.

Pay: RM4,300.00 - RM5,500.00 per month
