• Shouldering the Food and Beverage manager with the entire responsibility of monitoring, supervising, and optimizing the performance of 14 outlets, including financials (P&L), staffing (labor), training, succession planning, marketing and strategies, entertainment, budget, CAPEX, forecast, profitability, recruitment, menu engineering, and efficiency of team members through VLR.
• Progressively spearheading the 14 outlets, including fine dining restaurants, franchised restaurants, restaurant bar, market concept comprising of multiple vendor kiosk with high volume, lounge, bar, fast food, theme park kiosks & halal restaurants
• Formulating and effectuating the unique strategies of F&B lifestyle promotions in the outlets & market them on social media, in-house TV, website, QR menus, SMS blast, and mail blasts for success. Assessing the outcome of success with pre-& post P&L.
• Assist with Determining, and onboarding the right vendors to manage the kiosks - this involves finalizing contracts, licenses & approvals in a market concept restaurant
• Collaboratively working with the beverage brands to seek sponsorship, use those funds against sourcing bands, entertainment & also indulge in incentives for the team members in a beverage concept restaurant
• Supporting the casino guest to patronize the F&B outlets under Genting & not drift away to the third-party outlets by conceptualizing packages
• Achieving the competitive edge by monitoring the pricing trends and menu engineering
• To assist the Food and Beverage manager in the day to day running of the division, and will act as deputy in the absence of the Food and Beverage manager.
• To ensure the profitability, efficiency and creativity in each Food and Beverage outlet including outlets which are under brands.
• To analyze and control food and beverage costs in order to achieve financial targets.
• Steering an array of activities, including maintaining standards, performing marketing, activations, audits, contracts & visitation while collaborating with the international LIFESTYLE brands such as Burger & Lobster, Harry Ramsden, Ed\'s Diner, Motorino, Wolfgang\'s Steakhouse, Cafes Richard
• To identify areas for improvement in service and food & beverage quality by reviewing various service quality audit reports, guest comment cards and guest incident reports, and formulate action plans.
• To encourage proactive, efficient and effective inter-departmental communication in order to promote a climate of teamwork and enthusiasm.
• To ensure that the health and safety company standards are maintained and carried out. They must be monitored regularly to ensure maximum compliance on the Genting health and safety audit.
• To develop and implement and maintain the Standard Operating Procedures for the Division.
• To ensure customer satisfaction is above all levels
• To maintain a team of well-trained and motivated colleagues in order to deliver a high level of service according to standards
