The Chef De Partie is concerned with the maintenance of superior quality and standards of food preparation and presentation; the development Commis Chefs, contributing to the profitability of the kitchen brigade and responsible for the organization and effective supervision of their designated section.

What will I be doing?

As Chef de Partie, you will be responsible for performing the following tasks to the highest standards:

1. To maintain a high customer service focus by approaching your job with the customers always in mind.

2. To have a positive impact, taking personal responsibility and initiative to resolve issues, always clearly communicating with both customers and colleagues.

3. To be motivated and committed, approaching all tasks with enthusiasm and seizing opportunities to learn new skills or knowledge in order to improve your personal performance. Setting standards for your subordinates.

4. To be flexible, responding quickly and positively to changing requirements including the performance of any tasks requested of you.

5. Overall responsibility to ensure and maintain high team focus by showing co-operation and support to colleagues in the pursuit of team goals.

6. To maintain a kitchen environment that promotes flair, creativity and consistency in the quality of food taste and presentation.

7. To ensure that all Food Safety System polices and guidelines are followed and implemented.

8. Ability to highlight to subordinate if standard not followed or team facing challenge to achieve desired outcome.

9. To assess and monitor cleanliness on a daily basis, ensuring that all equipment remains clean and in good working order.

10. To supervise, guide and develop chefs of a lower grade ensuring the quality of food production remains at optimum levels.

11. To liaise closely with the Sous Chef / Junior Sous Chef, ensuring food quality and preparation techniques are of the highest standard.

12. To closely monitor and control the daily food merchandise, ensuring quality of goods received, taking corrective action where necessary.

13. Food Safety and Hygiene: To follow all FSS polices and guide lines are followed. Temperature Log monitoring and updated daily.

14. To follow Fire & Safety procedures.

15. Ensuring all Hotel policies and procedures are correctly observed and followed.

16. Performing any additional tasks as delegated by management or guests to ensure our guests receive outstanding service.

What are we looking for?

A Chef de Partie serving Hilton Brands is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:

  • Minimum SPM Qualification - Technical education in hospitality or culinary school preferred.
  • At least 3 years working experience in a 5-star category hotel or individual restaurant with high standards.
  • Minimum of 1 year as Demi Chef de Partie or equivalent position in an international brand hotel.
  • Familiar with a variety of cooked food processing, storing and receiving standards.
  • Able to work with and consume all products and ingredients.
  • Able to set priorities and complete tasks in a timely manner.
  • Work well in stressful situations, remain calm under pressure and able to solve problems.
  • Able to work in a moist, hot and sometimes loud environment.
  • Possess good leadership and training skills.
