Commis is responsible to maintain high standard of food preparation and service in the appointed kitchen(s) according to standards set by the Management; responsible for storing ingredients and assisting with food preparation; and to ensure that the kitchen and storage areas always remain clean.
Responsibilities:
Under the general supervision of the Outlet Chef;
Preparing meal ingredients, which includes seasoning of different meats as well as washing, peeling, and chopping vegetables and fruits.
Preparing basic items and sauces as directed by the Outlet Chef;
Plating and presenting meal items as per the Outlet Chef's instructions.
Ensures that mise-en-plus is completed prior to service;
Ensures that food quality and standards are always maintained when preparing for the restaurants;
Receiving deliveries and verifying that all ordered items have been delivered and are of good quality.
Taking inventory of restaurant supplies and notifying the supervisor of low or depleted supplies.
Discarding all expired and spoiled food items stored in the stock rooms, refrigerators, and freezers.
Acquainted and familiar with the use of all electrical and mechanical equipment in the kitchen and observes the safety precautions when handling them;
Ensures proper use and cleaning of equipment in order to prolong the use and prevent damage;
Maintains strict control on food portioning and wastage, ensuring gross food profitability;
To have a thorough understanding and knowledge of all Kitchen related services and products;
Performing basic cleaning duties and ensuring that workstations are properly sanitized.;
Cooperate and communicate with all serving and kitchen staff; and
Adhere to all relevant Health Department rules/regulations and all customer service guidelines.
Performs other related duties to benefit the mission of the organization.
