JOB DESCRIPTION \xe2\x80\xa2 To assist in the supervision of the Kitchen associates. \xe2\x80\xa2 To ensure food preparation is done according to Hatten Hotel standards of food quality, presentation and sanitation. \xe2\x80\xa2 To undertake duties which ensure the delivery of high class standards in preparation and service, as directed by Assistance Sous Chef and Sous Chef. Working at Hatten Hotel Melaka, including all outside catering events. \xe2\x80\xa2 Coordinate and participate with other sections of requirements, cleanliness, wastage and cost control. \xe2\x80\xa2 Control food stock and food cost in his/her section or kitchen. \xe2\x80\xa2 Cook food and prepare top-quality menu items in a timely manner. \xe2\x80\xa2 Commis I are also required to ensure that all stocks are well maintained. \xe2\x80\xa2 Ensure the quality of the food items. \xe2\x80\xa2 Ensure the highest standards and consistent quality in the daily preparation and keep up to date with the new products, recipes and preparation techniques. \xe2\x80\xa2 Ensure and prepare mise-en place for banquets and restaurant buffets as per quality required. \xe2\x80\xa2 Ensure the proper sanitation and cleanliness of surfaces and storage containers. \xe2\x80\xa2 Prepare and cook food according to recipes/menu. \xe2\x80\xa2 To assist chef in preparing food according to the requirements or recipes or standards and the specification for his department. \xe2\x80\xa2 To assist chef with chopping, packing and helping with dishes. \xe2\x80\xa2 Work according to the menu specifications by Chef. \xe2\x80\xa2 To perform any other duties as may be directed from time to time by the Executive Chef.
