Analyses Daily Receiving Report to categorize the total F&B purchases into major food & beverages supplied. Monitor the receiving and store are up to date and check & balance of the daily receiving. Book the invoice if all in order and send the detail to KL HQ for further process.
Tabulate the OC & ENT of all outlets by individual officer and ensure it is charge to the correct cost center, prompt AR Supervisor and HR for Employee Ledger for over consumption.
Monitor Food & Beverages transfer between outlets and prompt Kitchen and Bar if any irregularity.
Ensure physical stock count conducted every month and reconcile to system balance. Highlight to AM for discrepancies.
Implement cost control policies and procedures to improve the food & beverages cost, other supplies and establish efficient stock level. Ensure all store item are available at all time.
To work closely with the Store Supervisor for a better control on the Store Operation.
To advise and constantly monitor the Store personnel on the storage and issuance method.
Prepare Food & Beverages Cost Reconciliation to derive net food & beverages cost of all outlet.
Checked on daily report
Analyses and monitor on the average consumption as compare against itemize sales records. Spot check in all F&B Outlet to ensure no irregularity
Investigate any discrepancies found on irregular high consumption.
To establish the par stock of operating equipment in rooms as well as F&B.
To establish a control on the OE and to look into the reasoning of the new request to purchase.
Initiate OE count every month to ensure the OE stocks are in order
Maintain breakages report and F&B food wastage report to ensure no discrepancies in all outlets. Investigate any irregularities spotted.
To monitor and work closely with Asset Controller Supervisor for a better control and record of the Resort's assets.
To plan and to initiate the work on the comprehensive assets control without depending on the others.
To perform any other duties assigned by the management from time to time.
