About the Role

The Junior Sous Chef - Cold Kitchen assists the Executive Chef and Sous Chef in overseeing the cold kitchen operations, ensuring the preparation and presentation of high-quality cold dishes, salads, appetizers, and desserts. This role involves supervising kitchen staff, maintaining hygiene standards, and contributing to menu development.

Key Responsibilities

Supervision & Training

: Lead and train the cold kitchen team, ensuring adherence to recipes, presentation standards, and safety protocols.

Food Preparation

: Oversee the preparation of cold dishes, including salads, appetizers, and desserts, ensuring consistency and quality.

Inventory Management

: Monitor stock levels, assist in ordering supplies, and manage inventory to minimize waste.

Quality Control

: Ensure all cold dishes meet the hotel's quality standards and are prepared in a timely manner.

Collaboration

: Work closely with other kitchen sections to coordinate the preparation and service of dishes.

Hygiene & Safety

: Maintain cleanliness and organization of the cold kitchen area, adhering to health and safety regulations.

Menu Development

: Assist in the creation and testing of new cold dishes, incorporating seasonal ingredients and guest preferences.

Qualifications & Skills

Proven experience in a cold kitchen or similar role within a hotel or fine dining establishment. Strong knowledge of cold food preparation techniques and presentation. Leadership skills with the ability to train and motivate a team. Excellent organizational and time-management abilities. Familiarity with food safety and hygiene standards. Ability to work flexible hours, including weekends and holidays.

Pay: RM2,800.00 - RM4,500.00 per month
