Responsible for operating the Japanese / Sushi section of the kitchen to deliver an excellent Customer and Member experience. Required to plan production and develop seasonal offerings based on the Japanese menu. Demonstrates high-level knife skills and special skills associated with sushi prep, production and presentation. Typically serve an introductory dish before getting to the sushi. Prepares and presents sushi and related food products to customers. Aside from cases where a customer has an allergy or intolerance to a specific ingredient, an omakase / sushi chef determines at the spur of the moment what will appear on the plate. Typically driven by the ingredients available to them, which are customarily selected based on both quality and seasonality. Ensure consistency in quality of dishes at all times. Supervise and coordinate all preparation and presentation in section. Plan production to facilitate daily requirements. Develop appropriate seasonal menu offerings. Manage food cost controls to contribute to Food and Beverage revenue.
