Role Purpose * Create and manage a robust foundation between MAB and KUL & Station Caterer, ensuring adherence to high-quality standards within budget and the agreed SLA.

  • Assist the Manager In-Flight Service Food and beverage, coordinate the menu design, and craft and plan menus that enhance the overall culinary experience for airline passengers. This role involves collaboration with the culinary team, considering logistical constraints of in-flight kitchens, and ensuring that meals meet standards of quality, taste, and presentation.
  • Manage all menus through the In-Flight Catering Operations System (ICOS), consistently developing new innovative menus and service components by staying abreast of market and industry trends. This continuous effort aims to create a distinctive F & B onboard experience for guests on outbound and inbound flights. Additionally, foster innovation for new aircraft types and routes in the MAB network, covering all non-standard flights and outbound cargo menus for various destinations.
Key Accountability * Manage the systematic development, in collaboration with KUL & Station Caterer within the agreed SLA, of new menus, detailed recipes, and product specifications for each menu component (including menu specifications, weights, product quality, appearance, etc.) on a rotation basis for all routes, zones (classes), and services across all MAB flights. This is done according to predefined parameters such as passenger mix budgets and local/sector-specific requirements, considering actual regional and international market trends.
  • Liaise and communicate effectively with colleagues in other sections/departments of the company - Marketing, Crew, Svc Delivery Caterers. Represent MAB as a culinary ambassador for special food functions and MAB-related events and promotions when requested by management.
  • Ensure all F& B (non-alcoholic) is fully Halal and prepared to Islamic and Malaysian Halal standards, covering all HACCP standards as well.
  • Be responsible for MAB cargo destinations within the region - menu design, menu rotations within the given budget, and communication with the IFO team looking after MAB cargo.
  • Manage the contract agreements for meal quality, performance, and costing structure with KUL & Station Caterer. Evaluate performance regarding F& B with detailed reports to the QA/Halal team and Senior Management. Coordinate with MAB Base catering officers on a daily basis regarding operational issues and day-to-day operations.
  • Initiate, plan, and conduct menu presentations with caterers for new station startups or planned menu rotations, including tenders and caterer selection processes regarding caterers\' performance related to culinary aspects, cost of food products, and labor.
  • Plan and manage F& B requirements for all non-scheduled MAB flights, e.g., VVIP and flights with special requirements outbound & inbound of Malaysia.
  • Develop all Inflight Food-related printed menus and ensure correct agreed sign-off procedures, including the product team.
  • Support the Manager In-Flight Service Food & Beverage in setting the highest possible food quality standards for all MAB ground F& B outlets according to MAB-specific requirements, including training sessions for crew, roadshows, and management food presentations.
  • Manage self-development and improvement by setting KPIs and objectives supporting the goals and visions of MAB.
  • Conduct industry benchmarking of menu design with other airlines, restaurants, and food production companies.
Qualifications & Working Experience

Degree in culinary arts with 8 years of working experience.
