Conduct ongoing training and staff development to maintain high service standards; monitor potential staff for future growth.
Ensure regular banquet guests and VIPs are recognized by name to encourage repeat visits.
Monitor and ensure SOPs are consistently followed.
Collaborate with the Manager to smoothly execute outlet promotions and organizational tasks.
Maintain high grooming standards for all staff.
Ensure cleanliness and proper ambience; coordinate with Housekeeping and Engineering as needed.
Conduct staff counselling when necessary.
Manage costs efficiently, order only necessary items.
Prepare and manage staff duty rosters to ensure adequate staffing throughout the day.
Conduct and participate in daily briefings; ensure effective communication to all staff.
Monitor staff attendance, punctuality, absenteeism, and medical leaves.
Record all messages and job assignments in the captain's communication book for proper dissemination.
Ensure guest bills are properly opened and settled to avoid discrepancies.
Maintain and improve personal relationships with guests.
Anticipate operational needs regarding manpower, equipment, and mise-en-place.
Handle guest complaints promptly and professionally.
Maintain personal hygiene and workplace cleanliness at all times.
Attend F&B meetings and organize monthly Captain Meetings.
Ensure discipline and professional conduct among staff.
Monitor operational safety and prevent losses.
Perform duties promptly and maintain effective liaison with other departments.
File checklists, review, and recommend changes as necessary; ensure timely submission.
Keep internal notice boards updated with relevant information.
Promote effective communication between kitchen and service staff.
Welcome and introduce new employees to colleagues and superiors.
Brief new employees on house rules, departmental standards, and grooming requirements.
Explain employee benefits, career development, and internal procedures (leave application, MC, emergency leave, annual leave, etc.).
Ensure shift duties are completed and properly handed over, delegate as necessary.
Strictly enforce adherence to SOPs and departmental procedures.
To carry out any other duties assigned from time to time by the Management.
