As a Head Chef at Eastern & Oriental Express, A Belmond Train you are part of a team that brings culinary visions to life through immersive, unique, and hand-crafted gastronomic experiences. In this role, you will work alongside Executive Chef, Train Manager and skilled colleagues to prepare the highest quality food from recipes. Primary responsibilities include: Collaborate with the Executive Chef to create and regularly update a gourmet menu. Innovate by incorporating high-quality, seasonal ingredients, and design visually stunning dishes. Lead the kitchen brigade by setting a high standard for creativity, quality, and consistency in food preparation and presentation. Inspire and mentor kitchen staff to excel in their roles. Oversee all kitchen operations, including food preparation, plating, and presentation. Ensure efficient workflow, maintain cleanliness, and enforce safety and sanitation standards. Maintain exceptional standards for food quality, flavour, and presentation, ensuring every dish meets or exceeds the train\'s rigorous standards. Recruit, train, schedule, and manage kitchen staff. Monitor performance and provide constructive feedback to encourage professional growth and development. Manage food costs by implementing portion control, reducing waste, and optimizing inventory management. Work with suppliers to procure premium ingredients at competitive prices. Enforce strict adherence to food safety and sanitation regulations to maintain a safe and hygienic kitchen environment. Eastern & Oriental Express is relaunching on February 19, 2024. Requirements 3-5 years relevant experience within a similar role. Proven experience as a Head Chef or (Executive) Sous Chef in a fine dining restaurant or a similar upscale culinary environment. Proven leadership ability and experience in handling and coordinating different teams. Culinary degree or equivalent training in culinary arts. Demonstrated ability to be innovative and creative. Experience in creating, costing, and maintaining of recipes In-depth knowledge of food safety and sanitation regulations. Excellent problem-solving and organisational skills Ability to work in a high-pressure, fast-paced environment. Knowledge of wine and beverage pairings is a plus We seek warm, genuine, authentic people with a passion for travel and discovery. You are self-assured without being arrogant, and keen to interact with our discerning guests. You are a great storyteller with a positive mindset and a can-do attitude. International exposure will be considered a plus. You must speak English. Additional languages, such as Japanese, Korean, Cantonese, French and German, are a benefit. We welcome a diversity of backgrounds, ethnicities and religions. Experience in the hospitality industry is a bonus, but not a necessity. You could be from an independent restaurant or bar, have worked in luxury retail or private villas, or be a tour guide.
