Job Description


Business and P&L owner of Santan Restaurant Sdn Bhd in franchise, retail & operations division.To manage entire business performance from business strategy plan, franchising expansion plan, execution to profitability level that is aligned with management direction.Ability to think critically and provide positive, constructive, and actionable feedback to management.Overall responsible for restaurant chain & retail operations, including and not limited to revenue and cost management, people management, product quality standards, food safety standards, hygiene standards, SOP compliance, customer service management, internal audit complianceOversee and manage the Profit and Loss by meeting monthly sales and cost target at budiness level and outlet levelOversee revenue and expenditure managementForecast requirements; prepare an annual budget; schedule expenditures; analyze variances; initiating corrective actionsBusiness financial reports submission to GM and Santan board of directors on regular basis to evaluate business performance and come up with corrective or improvement plan to ensure business performance & growthManage overall operations and is responsible for the effective and successful management of all controllable costs including food, beverage, labour, productivity, quality control and safety measures as established and set for the Operations DepartmentDrive and monitor sales on daily basisDevelop and implement corrective plans on sales performance.Alignment of goals, objectives, and long term business strategies between external and internal stakeholders.Work with internal stakeholders to strategize and implement key objectives that help improve and expand the business.Must clearly understand the goals of the organisation and develop a clear vision of exactly how efficiently run operations will help achieve them. This involves the practical implementation of these goals to ultimately produce quality products, speedily, dependably, and cost-effectively.Develop and implement a clear set of guidelines and SOPs which are aligned to the organisation\'s long-term goals.Talent planning to decide how the resources available to the department need to be applied and ensuring that objectives are achieved efficiently.Continually monitoring and improving the overall performance of the company\xe2\x80\x99s operation.Reduce production costs and increase efficiency.Increasing revenue by supplying good quality products and services.Providing the basis for future innovation by building a solid base of operational skills and knowledge within the business.Serve as liaison between Home Office, 3rd Party Contractors and FranchiseesManage construction projects for all retail locationsAssist with due diligence on real estate sourcing to ensure building condition, dimensions, engineering, layouts and utilities are suitable to get the retail location up and running.Develop and model out project level budgets and timelines for approvals, creating P&L\xe2\x80\x99s with finance managerOnce scope of work is received, prepare bids and send to contractors (when applicable),manage RFI\xe2\x80\x99s and shop drawing approvals, level and negotiate bids and award contracts.Day-to-day:Managing franchise & retail compliance with the requirements and standards of the business.Responsibility to ensure that all franchises & retail stores are operating as per total compliance to Santan requirements and standards.Works with franchisees & retail store owners on timely resolution of compliance issuesEnsure growth initiatives are completed and also improve the stores\xe2\x80\x99 sales and minimum profitability, including an analysis of financial information, product mix and pricing as well as introduction of fresh products and services.Consults with franchisees on maintaining operational excellence and increasing sales growthIdentifies unique needs of franchisee and restaurants and creating business solutionsSubmit reports to the senior management and other disciplines when required.Responsibility for completing all the assignments of the annual operating plan items.Assists with new restaurant setup and organization, staff training, and grand opening proceduresCommunicate and implement changes to standards, policies and contracts with franchisees and follow up on all issues within the franchisee contractAbility to work with airasia group of companies / line of business to leverage the potentials and maximise Santan exposure and salesSkillsThe manager should have good verbal and written communication skills to convey the business strategy to stakeholders. He / She should have strong leadership skills to manage franchise owners. The manager should be skilled in the particular policies and procedures of the franchise field, such as food preparation skills, cost optimisation, operation efficiency, speed of delivery for a restaurant franchise as well as retail store franchise.Financial skills to develop a profitable business plan, monitor sales on a daily basis, develop a budget pnl that is aligned to the group\'s strategy. Strong analysis and problem solving acumen, influencing and negotiating skillsTime and project management skills and ability to travel most of the time.Demonstrated and successful ability for leading, motivating, holding accountable, developing, directing and achieving franchise partners.Highly driven with a proven record for achieving results.Strong marketing and branding capability to improve Santan brand value and exposure.RequirementsBachelor\xe2\x80\x99s degree in business management, marketing or finance. Min 5 years experience in franchising F&B industry.Extremely detailed and organized to manage multiple projects in an entrepreneurial environmentStrong relationship with Airports, Transit oriented developers, landlords and mallsStrong spreadsheet and budgeting skillsHas an eye for design with the ability to make decisions on the fly while on-siteAbility to create and document processes from scratch setting the grounds for future projectsExperience with vendors/brokers and the ability to manage parties both internally and externallyHas a strong understanding for architectural drawings and construction site managementAble to meet deadlines and budgets according to expansion plansWilling to travel and work flexible hours and must be hands on in restaurant operations.Good people management skillsGood to have experience in management of multi store restaurants.Good communication skills and strong interpersonal skills.
