With the rapid expansion and future developments, we are seeking for a creative, strong & innovative Product Development Chef - Pastry (R&D Chef - Pastry) The Product Development Chef - Pastry is essentially tasked to oversee the creation of new recipes that meet the organization standards, enhance existing products, and ensure that all pastry items produced by the organization align with market demand. They must also ensure that the entire R&D process is compliant with mass production requirements and regulatory standards. He/She is consistently innovating new pastry products tailored to different seasons, themes and to enrich the overall organization\'s pastry product portfolio. Additionally, he/she is responsible in developing a line of packaged products within our existing brand framework. Preferably, he/she will also be responsible in the creation of retail products, including consumer packaged goods (CPG) and frozen items. The job scope includes but not limited to; Develop new pastry recipes that align with the seasonal themes, market trends, organizational needs, costing and brand identity. Improve existing pastry products by refining recipes, enhancing flavors, and optimizing central pastry kitchen production processes. He/she must establish product specifications and documentations. Conduct market research to identify consumer preferences, trends, and competitors offerings. Collaborate with cross-functional teams, including directors, marketing and sales department, to ensure alignment and successful product launches. Manage and oversee the entire R&D Pastry process, spanning from ideation and recipe creation to testing, scaling, and implementation, with a particular focus on ensuring compatibility with central kitchen production capabilities. Ensure that all pastry products meet quality standards, food safety regulations, and cost targets. Stay updated on industry developments, new ingredients, and culinary techniques to drive innovation and continuous improvement. Mentor and train junior pastry chefs and kitchen staff on R&D best practices and techniques. Manage the R&D process of ideation and implementation of retail products, including consumer packaged goods (CPG) and frozen items. Perform other duties as assigned by Executive Pastry Chef Conduct food tasting and sensory evaluation with directors, Head Of Department and relevant departments. Work closely with the Directors and Executive Chef on the development and launch of new or improved recipes Who we are looking for; Bachelor\'s degree in Culinary Arts, Pastry Arts, Food Science, or a related field. Advanced degrees or certifications are a plus. Proven experience as a central kitchen pastry chef, with a focus on research and development in a professional kitchen environment. Possess a creative mind-set and a passion for experimenting with flavors, textures, and techniques, strong culinary pastry skills, and the ability to manage the entire R&D process from concept to mass production. Proven experience in central manufacturing, retail products such as CPG items, frozen items etc Excellent project management and organizational skills, with the ability to prioritize tasks and meet deadlines. Strong communication and collaboration skills, with the ability to work effectively in a team environment. Knowledge of food safety regulations, sanitation practices, and quality control standards. Experience with recipe scaling, cost analysis, and production optimization. The budget for this role is RM7,000 - RM9,000
