Job Description


The Culinary Coordinator is responsible to assist the Executive Chef and Executive Sous Chef in logistical, administrative and confidential managing the kitchen operations. The Culinary Coordinator is to ensure to fulfil and to complete all required administrative functions/ tasks as outlined/ assigned or given by the Executive Chef/ Executive Sous Chef. To keep the confidentiality of all financial results/ targets and any other information/ task/ policies/ recipes/ calculations/ goals as advised, instructed and outlined by the Executive Chef/ Executive Sous Chef The Role of Culinary Coordinator Foster positive thinking and motivation within all kitchens by giving active assistance and advice on more effective ways of running the administrative tasks in the kitchens Plan, correspond, file and trace any given task, activities, special events and menu implementations accordingly Ensure that all designated action points from daily briefings or bi-monthly operational meetings are recorded, traced and filed Ensure that positive working relations with non-food and beverage departments are fostered giving co-operation at all times Be aware of and comply with all legislation affecting the operation, including licensing regulations, health regulations and fire & safety regulations Ensure disciplinary and grievance procedures are properly adhered to and followed Respond to customer comments and complaints when advised by the Executive Chef/ Executive Sous Chef Be responsible and accountable for the overall stationary cost Find ways to improve the efficiency of the administrative operations Constantly assist to strive in reducing energy consumption through awareness campaigns within the kitchens via the communication board Co-operate with and drive forward the implementations of Mandarin Oriental Quality Experience Ensure effective implementation of the IMS policy and procedures Ensure continuous training and awareness of the IMS system Ensure OTPs are monitored and acted upon Identify areas of improvement through CPAR or suggestions Ensure operational compliance to legal regulations and other requirements Identification of new activities that are in relation to EASI and HIRADC.
