A Head Baker is a culinary and business professional who provides expert advice and guidance to bakeries on various aspects of their operations. This includes product development, production processes, quality control, cost management, and business strategy.
We are looking for Head Baker or Assistant Head Baker at Tous Les Jours, Malaysia.
Key Responsibilities:
Analyze ingredient and labor costs to identify opportunities for savings.
Analyze production processes to identify bottlenecks and inefficiencies.
Assess the bakery's current operations, including production capacity, staffing, and financial performance.
Conduct regular quality audits and taste tests.
Create new and innovative bakery products, taking into account market trends, customer preferences, and dietary restrictions.
Develop and implement comprehensive training programs for bakery staff.
Develop and implement food safety programs and training.
Develop product costing and pricing strategies.
Develop strategies to optimize pricing and profit margins.
Ensure compliance with food safety regulations, including HACCP and other relevant standards. Establish and maintain rigorous quality control standards to ensure consistent product quality.
Identify and address quality issues promptly.
Identify areas for improvement and develop strategies to optimize efficiency and profitability.
Implement cost-effective sourcing strategies and inventory management systems.
Implement streamlined workflows and standardized operating procedures to improve productivity.
Maintain a clean and safe working environment.
Refine existing recipes to enhance flavor, texture, and visual appeal.
Train staff on proper baking techniques, equipment usage, and quality control standards.
Required Skills and Qualifications
Experience in bakery operations and management
Strong culinary skills and knowledge of baking techniques
Excellent problem-solving and decision-making abilities
Strong communication and interpersonal skills
Business acumen and financial analysis skills
Ability to work independently and as part of a team
Food safety certification (e.g., ServSafe)
Experience in project management would be advantage
Knowledge of food trends and consumer preferences
